What are you cooking during lockdown?

Sadly it was just Lidl's finest/only pesto! It did all taste good though, nice result.

I might try making some nettle pesto, did you mention that a way back on this thread?
=UCKING nettles everywhere down here,gonna pick the tops only and hand them over to my missus to knock out out a soup (stock and spud to thicken)

None of that tomorrow..........sun out............charcoal out......meat out on barbecue.
 
Thai green curry and rice tonight. Recipe called for chicken, but I substituted it for fake chicken pieces and butternut squash chunks.

Thai green curry is one of our staples (have red sometimes too) usually throw in some sliced mushrooms and peas or sometimes sliced leaks to vary it a bit. We often put a little diced cucumber in with the rice too.
edit.. tend to use sliced spring onions rather than normal ones

Great stuff isn't it. This did have peas and sliced spring onion in too! Can of coconut milk and a packet mix, bosh. Very mild though, would have liked a bit more oomph personally. Interesting idea with the cucumber in the rice! Might have to try it.
 
I also roasted the seeds and skin from the butternut squash afterwards. The seeds are gorgeous and if you cut the skin well without including the flesh, they crisp up like...well, crisps.

It’s one of our favourites, we use the coconut milk too but we’ve been using the Thai green ( or red) curry paste from a jar (Blue Dragon brand). It says to put a quarter of a jar in so it’s easy to adjust to taste,as I like it quite hot too.

Must try that, my wife sometimes makes a butternut squash soup so it’s good to use everything up

Yes, we are all going around Rob`s house when the recession finally kicks in and our food cupboards are bare and the supermarkets have all closed down due to a lack of supplies.At the mo I wouldn`t give one of those butternut squashes house room,is it right you need a fucking chainsaw just to cut them in half!

Seems like all lads on here like a bit of Thai and i`m off this morning to a specialist Thai food shop(in the back of a restaurant) to pick up some goodies including pancakes for crispy duck, pea aubergines etc might see if they have any cooked pangolin meat for a stew later in the week.

Decent weather went missing down here 500ft up on Exmoor....back to the smorgasboard...........indoors

hot beef and tomato soup with garlic croutons,hot chorizo sausage on brown,avocado/smoked salmon ,salad, Moroccan hummus,a few cheeses and a rose to wash it down.
strawberries/cream.
bbq looks like it`s covered in cobwebs.......weather better pick up for tomorrow.....been down the butchers and Thai shop and the fridge is full of sirloin,rump and pork fillet

mankini washed and ironed and ready for action tomorrow.
